SEMOLINA BANANA BREAD

This semolina banana bread is the best way to use up overripe bananas. This moist and flavourful bread is packed with ripe bananas, giving it a natural sweetness and rich banana flavour, perfect for breakfast, a snack or dessert.

Ingredients

    • 2 large ripe bananas, peeled
    • 1 cup Laila Semolina Fine
    • 1 cup rolled oats
    • 2 medium eggs
    • 1 cup honey
    • ½ teaspoon cinnamon
    • 1 tsp baking soda
    • 1 tsp vanilla extract
    • ½ cup walnuts, chopped and toasted

Method

    • Preheat the oven to 180°C and line a loaf tin with baking paper.
    • Whizz the bananas (keep some for garnishing). Combine semolina flour, oats and eggs in a food processor until smooth.
    • Fold in honey, cinnamon, baking soda, vanilla extract and walnuts.
    • Pour the mixture into your prepared loaf tin and place the remaining banana slices on top. Bake for about 20 minutes. Insert a skewer, if it comes out clean then the loaf is cooked through.​
    • Let it stand and cool for 10 minutes on a wire rack.
    • Lift the bread out, slice and serve.
