Ingredients

    • 120g Laila Gram Flour
    • 1 tsp ajwain seeds
    • 2 tsp amchur powder
    • 1 tsp crushed chillies
    • ½ tsp Laila Chilli Powder
    • Himalayan pink salt, to taste
    • 2 tsp chaat masala
    • water as required
    • ½ a pumpkin (small)
    • Laila Sunflower Oil, for deep frying
    • Laila Bombay Coriander & Mint Sauce, Laila Gujarati Tamarind & Date Sauce, to serve

Method

    • In a mixing bowl add gram flour, ajwain seeds, amchur powder, crushed chillies, chilli powder, pink salt & chaat masala.
    • Add water to the mixture to make a smooth batter which coats the back of the spoon once dipped.
    • Next peel and clean the pumpkin. Cut into thin slices, 1mm in thickness.
    • In a medium size pot pour vegetable oil on medium-to-high heat to deep fry.
    • Once the oil is hot, dip the sliced pumpkin in the batter, deep fry until golden brown and crispy.
    • Sprinkle some chaat masala over and serve hot with Laila Bombay Coriander & Mint Sauce. For a tangy combination try with Laila Gujarati Tamarind & Date Sauce.
