Start off your day with this delicious breakfast idea. Tender rice is combined with poached egg, fresh spinach and topped with a creamy sauce.

Ingredients

    • 100g Laila Basmati Rice
    • 2 medium eggs
    • 200g spinach
    • 75g hollandaise sauce
    • 1 tbsp chopped chives
    • Salt and black pepper to taste

Method

    • Cook the rice, according to package instructions, drain well and season to taste.
    • Meanwhile poach the eggs in simmering water to your liking, and transfer to a bowl of cold water until needed.
    • While the eggs are cooking, place the spinach in a large bowl covered with clingfilm and microwave on high for 3-4 minutes until almost wilted.
    • Add 2 tbsp of water to the hollandaise sauce and warm it in the microwave in 15 second increments.
    • Using a small bowl as a mould, press your rice into the bowl, and turn onto a plate. Add your spinach, followed by the poached egg and drizzle with warm hollandaise sauce.
    • Sprinkle with chives and black pepper and serve. Add a pinch of Laila Paprika Powder for a smokey touch!
