Laila Lucknowi Biryani Kit

Lucknowi Biryani comes from the land of Nawabs – Lucknow in Northern India. The preparation is borrowed from the Mughlai cooking style, being softer in texture and milder in spice and a burst of fragrance. Prepared in a drum with eat or veggies and cooked in warm aromatic spices.

Ingredients: Basmati Rice (61%), Lucknowi Paste (38%): Low Fat Yogurt (Milk), Caramelised Red Onion (Red Onion, White Sugar, Balsamic Vinegar, White Wine Vinegar), Rapeseed Oil, Salt, Water, Ginger Puree, Garlic Puree, Modified Maize Starch, Coriander Powder, Ground Cinnamon, Yeast Extract Powder (Yeast Extract (Barley), Salt, Rapeseed Oil), Ground Green Cardamom, Turmeric Powder, Cumin Powder, Paprika Powder, Ginger Powder, Red Chilli Flakes, Acidity Regulator: Citric Acid, Ground Black Pepper, Ground Clove, Whole Spice (1%): Whole Green Cardamon, Cassia Sticks, Cloves, Bay Leaves, Black Peppercorn.

Boil the rice

Soak the Basmati rice for 10 minutes, strain the water and put it aside. Take 1l of water in a pot and bring to the boil. Add rice, whole spices and ½ teaspoon salt and allot it to boil for 7-8 minutes. Strain the rice in a sieve and fluff it with a fork.

Cook ingredients

Whilst the rice is boiling, in a medium hot saucepan add 2 tablespoons of oil, add the biryani past and your choice of protein or vegetables. Sauté them for 1-2 minutes. Add 200ml of water, cover with a lid and cook for 15-18 minutes or until cooked.

Assembling the biryani

In a pot, layer the hot and steaming rice and cooked protein/vegetables. Golden fry 1 sliced onion and sprinkle it over the Biryani. Add some chopped coriander on top. Place a tight lid on the pot and cook for 5 more minutes on a slow flame. Serve hot with raita and chutney and enjoy the royal treat!
