Rice and beans is a staple dish in Caribbean dining. Delicious paired with Jerk chicken or a hot pepper curry.

Ingredients
- 300g Laila Long Grain Rice
- 1 can Laila Red Kidney Beans
- 3 spring onions, chopped
- 120ml olive oil
- 60ml apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp Laila Cumin Powder
- 1 tsp garlic, freshly minced
- Salt and black pepper, to taste
Method
- Cook rice according to package instructions and allow to cool.
- In a small bowl, whisk together oil, vinegar, Dijon mustard, cumin powder and garlic until well blended.
- Season the dressing with salt and vinegar as per taste.
- Drain and rinse the kidney beans.
- In a medium bowl, combine rice, kidney beans and spring onions. Add dressing to the desired amount and toss to moisten.
- Serve immediately or cover and chill ahead of time.
