LEBANESE FATTOUSH SALAD

Vibrant, crunchy and flavoursome, Lebanese Fattoush Salad makes for a delicious side dish, made with fried pitta bread, seasoned with herbs and spices, loaded with vegetables and tossed in a sweet-tangy dressing.

Ingredients

    For Salad:

    • 2 large pitta breads, cut into small pieces
    • 5 tbsp olive oil
    • Kosher salt to taste
    • 2 tsp whole black pepper, freshly ground
    • 2 large heads of lettuce, chopped
    • 2 large tomatoes, diced
    • 4 cucumbers, diced
    • 1 small green bell pepper, chopped
    • 8 radishes, diced
    • 4 spring onions, chopped
    • ½ cup fresh parsley, chopped

    For Dressing:

    • 5 tbsp olive oil
    • 4 tbsp Laila Lemon Juice
    • 1 tbsp Laila Garlic Paste
    • 2 tsp lemon zest
    • 2 tsp balsamic glaze
    • 1 tsp mint, freshly chopped
    • 1 tsp salt
    • 1 tsp whole black pepper, freshly ground

Method

    • In a flat-bottomed pan, heat olive oil on a medium flame. Add pitta bread and sprinkle some salt and pepper.
    • Sauté pitta breads for 10-12 minutes until crispy and golden and set it aside.
    • In a large bowl, combine olive oil, lemon juice, garlic, lemon zest, balsamic glaze, salt and black pepper and stir well until the dressing is emulsified.
    • Add in lettuce, tomatoes, cucumbers, green bell peppers, radishes, scallions and parsley; toss to combine.
    • Add fried pitta bread before serving and gently toss the salad again.
    • Choose to serve it chilled or at room temperature.
