Vibrant, crunchy and flavoursome, Lebanese Fattoush Salad makes for a delicious side dish, made with fried pitta bread, seasoned with herbs and spices, loaded with vegetables and tossed in a sweet-tangy dressing.

Ingredients
- 2 large pitta breads, cut into small pieces
- 5 tbsp olive oil
- Kosher salt to taste
- 2 tsp whole black pepper, freshly ground
- 2 large heads of lettuce, chopped
- 2 large tomatoes, diced
- 4 cucumbers, diced
- 1 small green bell pepper, chopped
- 8 radishes, diced
- 4 spring onions, chopped
- ½ cup fresh parsley, chopped
- 5 tbsp olive oil
- 4 tbsp Laila Lemon Juice
- 1 tbsp Laila Garlic Paste
- 2 tsp lemon zest
- 2 tsp balsamic glaze
- 1 tsp mint, freshly chopped
- 1 tsp salt
- 1 tsp whole black pepper, freshly ground

Method
- In a flat-bottomed pan, heat olive oil on a medium flame. Add pitta bread and sprinkle some salt and pepper.
- Sauté pitta breads for 10-12 minutes until crispy and golden and set it aside.
- In a large bowl, combine olive oil, lemon juice, garlic, lemon zest, balsamic glaze, salt and black pepper and stir well until the dressing is emulsified.
- Add in lettuce, tomatoes, cucumbers, green bell peppers, radishes, scallions and parsley; toss to combine.
- Add fried pitta bread before serving and gently toss the salad again.
- Choose to serve it chilled or at room temperature.
