NUTTY BROWN RICE SALAD

This salad is a perfect balance sweet and savoury, combining seasoned brown rice with assorted nuts and dried fruit. A great way to spruce up leftover rice to create a quick and easy packed lunch to go.

Ingredients
- 150ml vegetable oil
- 1 medium onion, finely chopped
- 1 tsp Laila Garam Masala
- ½ tsp Laila Turmeric Powder
- 1 pinch Laila Chilli Powder
- 220g Laila Brown Basmati Rice, cooked
- 1 apple
- 1 tbsp Laila Lemon Juice
- 110g dried apricots, bananas, sultanas, coarsely chopped
- 110g assorted nuts, coarsely chopped
- 2 tbsp fresh herbs, chopped
- 1 tbsp vinegar
- Salt and ground pepper, to taste
Method
- Heat a splash of oil, add onion and cook until soft. Stir in garam masala, turmeric and chilli powder. Continue to fry for a minute.
- Place cooked brown rice in a mixing bowl and stir in the onion and spice mixture with a fork. Core and slice an apple. Dress the slices with lemon juice and add them to the rice mixture along with dried fruits, chopped nuts and herbs. Combine all ingredients thoroughly.
- Mix the vegetable oil and vinegar together and use it to moisten the salad, to your liking. Season to taste and serve.
