Make this simple and delicious rice pudding with raisins to satisfy your sweet tooth! Enjoy hot or cold, perfect for dessert or as a breakfast topped with fresh fruit and nuts.

Ingredients
- 400ml water
- 200g Laila Basmati Rice
- 85g raisins
- 4 tbsp honey
- 225ml unsweetened soya milk
- 60g toasted and chopped almonds
- 1 tsp cinnamon powder
- ½ tsp cardamom powder
Method
- In a medium saucepan, bring water to a boil.
- Add rice and stir. Reduce heat, cover and simmer for 45 minutes, or until rice is tender. Combine cooked rice, raisins, honey, soya milk, almonds, cinnamon and cardamom and bring to a boil.
- Lower the heat and stir frequently until thickened for about 5-8 minutes. Spoon into bowls, garnish with raisins and serve.
- For a perfect summer breakfast, top chilled rice pudding with cut fruits like apples, bananas and a spoonful of mixed nuts.
