A popular entrée from Lebanon, Shish Tawook takes succulent chicken breast, and marinates it in yoghurt, lemon juice and a medley of spices. It is then grilled or barbecued to create a delicious summer dish, perfectly served in pitta bread with a fresh, leafy salad.

Ingredients
- 60g plain yoghurt
- 2 tbsp Laila Lemon Juice
- 2 tbsp olive oil
- 1 tbsp Laila Garlic Paste
- 1 tbsp tomato paste
- 1 tsp allspice
- ¼ tsp Laila Paprika Powder
- ¼ tsp cinnamon powder
- ¼ tsp oregano
- ¼ tsp ginger powder
- 1 tsp salt
- ¼ tsp whole black pepper, freshly ground
- 450g boneless chicken breast, cut into cubes
- 1 onion, cut into large pieces
- 8 bamboo skewers
Method
- In a large bowl, prepare marinade by combing yoghurt, lemon juice, olive oil, garlic, tomato paste, allspice, salt and pepper. Whisk together to make a smooth paste.
- Add the chicken cubes and coat in the marinade. Cover and let rest in the fridge for at least 5 hours, to tenderise the chicken.
- Divide the chicken and onion and thread onto 8 skewers.
- Grill on a medium heat for 7-8 minutes each side and serve.
